Espanol Delight On A Cold Winter's Night

Returning from the searing heat of a Californian summer to a freezing apartment with insufficient heating in Melbourne, the taste buds and internal thermometer are screaming, "COMFORT FOOD!!!" I found a great tasty recipe in this month's Woolies Fresh mag - Spanish Chicken.

I didn't bother about the saffron or onion in the rice, chucked in way more paprika for a little extra bite, and kept it on the stove top for about an hour, simmering away. And there was plenty left for the next night when I substituted the rice for pasta shells, added a bit of chilli and stirred through a dollop of sour cream. Deliciosa!
